Spicy Paprika Barbecued Brisket

Ingredients:

1.5 teaspoons salt
1.5 teaspoons pepper
2    tablespoons spicy paprika
1    crushed bay leave
2    tablespoons liquid smoke
3    pounds beef brisket

Barbecue Sauce:

3    tablespoons rapadura (least refined sugar)
14  ounces catsup
1/2 cup water
2    tablespoons liquid smoke
4    tablespoons worcestershire sauce
3    teaspoons dry mustard
2    teaspoons celery seed
6    tablespoons butter
1/4 teaspoon spicy paprika
salt and pepper to taste

Makes 6 servings

Combine salt, pepper, chili powder and bay leaves.  Rub meat completely with liquid smoke  Place meat, fat side up in a large roasting pan.  Sprinkle dry seasoning mixture on top.  Cover tightly.  Bake for 3 1/2 hours at 325. scrape seasonings off meat and cut in thin slices across the grain.  Serve with barbecue sauce.

Barbecue Sauce:

Combine all ingredients.  Bring to a boil.  Cook for ten minutes, stirring occasionally.
