Beef and Green Peppers

Ingredients:

1 Pound Tender Beef (X-rib or chuck steak)
4 Green Peppers
4 Slices of Ginger
1 teaspoon Salt
2 Green Onions
1/2 Cup Oil (preferably an olive oil high in Omega-3s)

Marinade:
4 Tablespoons Soysauce
1 Tablespoon Cold Water
1 Tablespoon Wine (White)
2 teaspoons Cornstarch
1/2 teaspoon Salt
1 Tablespoon Olive Oil (most oils will work)

- Mix all marinade items together
- Shred Beef, about 1 inch in length (1/8 inch think)
- Soak in Marinade for at least 1 hour
- Clean Green Peppers and remove seeds
- Cut in halves and then slice across its width (1/2 in wide)
- Cut green onions into quarters length
wise and then cut into in inch sections
- Cut ginger into 1 inch sections (4) about 1/16th of an inch
thick. Then slice as thinly as possible.
- Heat (high heat) pan then add Cold oil (this will prevent sticking)
covering the bottom of skillet. Fry beef over high
heat for about 10 seconds (until cooked through)
(I think the recipe call for a deep fry, personally I think a saute
will work better)
- Drain and remove if deep fried. Though if you sauted your beef
then no draining is necessary.
- Heat another 4 tablespoons of oil in a pan. (high heat)
- Stir fry ginger and green onion for one minute.
- add green pepper and salt. Stir well.
- add beef, blend thoroughly and serve.

Serve with rice and vegetables.



Note: this is my mothers recipe from my childhood and I have not made it personally. If you do please let me know what you think. I will make it in time. Though we have so many to work on your help is appreciated. I have made minor changes as I do not feel it needs sugar (which it calls for 1/2 tsp when the salt is added.)
