Dear John,

Spring has finally shown up! It has been one of the longest, snowiest winters in history, holding promises of a good growing season.

We will be delivering to Steamboat Springs, May 6th between 1 and 2 PM at the little toots parking lot (we have eggs too), as well as the Farmers Market starting in June, and deliver to Denver on May 10th. Monthly deliveries will be scheduled to the Front Range, the next date can usually be found on our website.

This issue contains our first online cooking show, in which I'm demonstrating a recipe using round steak. Let us know what you think!

In April we were a semi-finalist for the Gallo Awards. Unfortunately we did not win, but I am hopeful that next year we will enter again and place.

Sustainability
 
Energy Savings

Conventional agriculture is one of the most energy intensive activities there is. Sustainability requires that a process can be carried on well into the future.

We take pride in the minimal amounts of energy needed to raise our grass finished beef. The lack of petro- chemical fertilizers in our operation, (used on most farms), further reduces our demands on tight world energy supplies.

The savings from moving towards sustainable-local agriculture would be enormous. "Energy represents a greater fraction of operating expenses for the agricultural sector than all but the most energy-intensive manufacturing industries," said Elliott. "With savings opportunities of this magnitude, energy efficiency programs could help counter the economic effects of rising energy prices."

We are not only striving to reduce our energy consumption, but are searching for ways to produce all the energy we consume on our ranch. By purchasing grass finished beef you are helping to reduce energy consumption, which will hopefully reduce the price at the pump we all pay.


The Round Steak
 

The round steak is a lean cut and it is moderately tough. Lack of fat and marbling, makes this cut of meat, dry out when cooked with dry-heat cooking methods like roasting or grilling. Round steak is commonly prepared with slow moist-heat methods including braising to tenderize the meat and maintain moisture.

The round steak has traditionally used in london broil and chicken fried steak. In creating my recipe this month, I have gone against conventional wisdom and am recommending grilling a stuffed round steak on a medium - medium low temperature.
