Whew, it has been quite a summer!
Come on down for the last Farmer's Market
of the year this Saturday, August 30th
from 8 AM - 2 PM. I will have my
bargain cooler out again this weekend
with some discounted beef (the processing
plant mistakes are your gains and my
loss), a limited supply of eggs and
almost any beef product your heart could
desire.
I can also make a limited number of
deliveries to the Front Range on
Wednesday September 3rd. Please
call 303-485-0278 or 970-879-1682 by
Monday evening so I can ensure your
delivery.

Chuckwagon
Chili
Challenge
Come Down to
Little Toots park for the
Chuckwagon Chili
Cookoff! I'll have my
Beef - Tomatillo Green Chili,
which Blair thinks is
fantastic.
The Chuckwagon Chili Challenge is
on Saturday September 13th, from
Noon to 4PM. There will be
live music with local favorites
including Sundog, Karaoke,
Dancing, Beer, Soda and Chili.
Come down for what will be a
great day and try some of my
chuck roast chili.

Smoked
Short Ribs
Low and slow is the way to cook
short ribs. Slow cooked,
they melt in your mouth and have
great flavor.
2 tablespoons of salt
2 tablespoons of pepper
2 tablespoons of onion powder
1 tablespoon of garlic powder
2 teaspoons of celery salt.
Combine all ingredients, rub onto
the package of short ribs and
smoke at about 220 degrees for 2
hours and then check for
tenderness. They are done
when they pull apart easily.

Paradigm
Mob Grazing
Change comes hard for all of
us. We learn a system,
become familiar with it, and
without some event we seldom
change our habits.
Herding has a long history,
beginning with the evolution of
the prairies. With new
technologies we are able to more
closely mimic grazing patterns
which centered around the
predator-prey relationship.
Large herds roamed in tightly
concentrated groups for their
protection.
These high stocking densities,
with short grazing durations and
long periods of rest have
disappeared from the grass
lands. Technology and
experimentation by some creative
ranchers have experimented with
higher stocking densities and
longer periods of rest with
profound results that will help
to feed more people.

Ribs

If you like beef, you'll love the results
of this beef short ribs recipe! Slow
cooked, they melt in your mouth and have
great flavor. If they're not cooked
right, beef short ribs are tough and
stringy. To bring out the best that's
hidden in these little beauties, you need
to cook them at a low temperature for a
long time.
This will break down and melt the tough
connective tissue in the meat, and bring
a burst of great flavor. That's the nice
thing about tough, stringy meats. Cooked
right, a "low quality" cut of meat can
end up with superb flavor!
